- Observation (CORRECTED DURING INSPECTION): The Quat sanitizer found in the labelled sanitizer spray bottle in the back prep area was around 50-100ppm which is too weak to destroy foodborne pathogens.
- Corrective Action(s): Sanitizer may lose efficacy over time and therefore fail at destroying foodborne pathogens, which may lead to pathogens being spread around the kitchen and causing cross conamination. Replace the sanitizer in the spray bottle with 200-400 ppm Quat sanitizer because at this concentration it can destroy all foodborne pathogens and prevent the spread of pathogens.

- Observation (CORRECTED DURING INSPECTION): Walk-in cooler had an ambient temperature of 9C at the time of inspection. Staff informed that they had called a technician in this morning who claimed to have fixed the issue but the temperature was still above 4C. Most contents of the cooler had been relocated to the front preparation coolers. The cooler contained some chopped vegetables and whole produce.
- Corrective Action(s): All chopped items were moved to the front coolers. Do not store potentially hazardous foods inside the walk in cooler until it can maintain at least 4C. Date to be corrected by: June 23, 2023. Inspector will return to follow-up.
