    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • A hydrogen peroxide sanitizer solution used on tables/customer counters was observed to not be strong enough at time of inspection. Manager refilled the sanitizer with solution from the dispenser and an appropriate concentration was observed.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Thermometers were not observed in the fridges. Please ensure a working thermometer is placed in the fridge in the kitchen and in the small counter fridge in the dining area.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The sanitizer (chlorine) bottle was empty when PHI arrived. The Manager replaced the bottle with a bottle of household bleach but there was still no chlorine detected in the tank after running it multiple times. Please have the machine fixed/get it working properly and use test strips to verify the chlorine concentration.
