- 19(1)(b) A food establishment must be located, designed, constructed and maintained to ensure all of the following:
(b) that operations are carried out in an area of the food establishment that is sanitized and appropriate to the operation;
- In accordance with Section 2.4.2 of the NS Food Retail and Food Services Code, you must ensure all floors are kept clean and in good repair. Repair floor in back area of the kitchen.

- 29(2)(c) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(c) the effectiveness of the program is monitored;
- Dishwasher temp gauge did not show above 180F on the rinse cycle, the rinse water temperature was checked using the TempRite test strip and found to be satisfactory. Ensure gauge is repaired or obtain some test strips to be able to verify that rinse temp is achieved.
- 29(2)(c) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(c) the effectiveness of the program is monitored;
