    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Mechanical dishwasher failed to reach proper wash and rinse cycle temperatures. - Dishwasher must be serviced and/or repaired so that the wash cycle reaches at least 140F and the temperature of the rinse cycle reaches at least 180F. - Temporarily switch to manual washing and sanitizing of dishware until the dishwasher is serviced and functions at the above noted temperatures.
