- 209 - Repeat Food not protected from contamination [s. 12(a)]
- Observation: (CORRECTED DURING INSPECTION) Various implements used a scoops are left in dry food products. (Public Health Significance) Improper scoops and scoop storage exposes items to bare hand contact and potential contamination.
- Corrective Action: Store scoops so that foods are not exposed to the handles or bare hand contact. Store food scoops in a sanitary manner and clean and sanitize them regularly.
- 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
- Observation: Observed the sanitizer dispensing unit to be broken as no diluted sanitizing solution was dispensed from the unit at time of follow-up inspection. Environmental health officer indicated to the operator that the dispensing unit needs to be replaced and / or repaired. Environmental health officer tested the sanitizing solution with QUAT test strips at time of follow-up inspection and a QUAT sanitizer solution was observed to be less than the regulatory 200ppm. Inadequate sanitizer concentration may fail to eliminate pathogens on the food contact surfaces, increasing the risk of cross contamination and food borne illness.
- Corrective Action: Operator to repair and / or replace the chemical dispensing unit and ensure a minimum concentration of 200ppm QUAT is within labelled spray bottles / buckets at all times to ensure adequate food contact surface sanitization. Operator to test sanitizing solutions with valid test strips and record sanitizing solution concentrations to ensure compliance and prevent the risk of cross-contamination within the food premises.
- 309 - Repeat Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
- Observation: (CORRECTED DURING INSPECTION) Sanitizer bottles were observed not to be labelled at time of follow-up inspection.This could easily be mistaken for another substance. Ensure that all chemicals that are not in their original manufacturer's containers are properly labelled. Observed operator write the chemical solution with a permanent marker at time of inspection.
- Corrective Action: Operator to ensure all chemicals used within the food premise are in adequately labelled containers.

- 201 - Critical Food contaminated or unfit for human consumption [s. 13]
- Observation: Contaminated food on premises. Observed build up of biofilm and bacterial residue on condenser components, lid, internal walls and dispensing unit of the kitchen ice machine at time of inspection. (Public Health significance) - All foods on the premises must be wholesome and free from contamination and otherwise fit for human consumption. Unacceptable and / or contaminated food items could cause food borne illness. Environmental health officer advised the operator that ice made from the ice machine equipment was to be discarded from the machine and bar well area, and no ice shall be offered to guests for beverages and / or used in food preparation until a re-inspection of the equipment and approval from the health officer is granted at time of follow-up inspection.
- Corrective Action: Operator to unplug, discard all ice and thoroughly remove all biofilm and bacteria residue from the ice machine, then adequately clean and sanitize the equipment and then receive approval from the environmental health officer prior to use within the food facility.

- Observation: Observed prepared food products stored on the floor of the walk-in cooler at time of inspection.
- Corrective Action: Ensure all food within the walk-in refrigerator are stored at minimum of 15 cm from the floor on dedicated wire shelving to prevent tripping hazards, product cross contamination from people, cleaners or dirt / debris from wall & floor surfaces, and permit thorough cleaning of floor surfaces to maintain cold storage equipment in sanitary condition.

- Observation: Observed scoops left in bulk dried food product bins (i.e. flour and sugar) for ongoing use at time of inspection. Improper scoop storage exposes items to bare hand contact and potential contamination.
- Corrective Action: Store scoops so that foods are not exposed to the handles or bare hand contact. Store food scoops in a sanitary manner and clean and sanitize them regularly.

- Observation: Raw meat is stored above ready to eat foods and produce within the walk-in refrigerator. Contact with and dripping fluids from raw foods can contaminate other items and lead to food borne illness.
- Corrective Action: Store raw meats below and isolated from ready to eat items and produce.
- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: (CORRECTED DURING INSPECTION) No active sanitizer detected in sanitizer containers or spray bottles. Environmental health officer checked the sanitizing solution chemical bottle and product was observed to be expired (expired 05/23/2019). (Public Health Significance) Sanitizing solutions must be strong enough to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface. Head chef went offsite and purchased a food contact sanitizer with valid expiry and a solution concentration of 200 ppm sodium hypochorite (bleach) was observed at time of inspection.
- Corrective Action: Change sanitizing solutions as required to always maintain an effective concentration (200 ppm unscented bleach, 200 ppm QUAT)- follow manufacturer's specifications)
- 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
- Observation: Observed Wiping cloths left on the counters between use. (Public Health significance) - Cloths once used can harbor and grow bacteria if left as used at room temperature.
- Corrective Action: Store wiping cloths in a sanitizing solution of 200 ppm chlorine or 200 ppm QUATs. Mix according to the manufacturer's specifications.
