- F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
- Observation(s): F2.3A - The dishwasher was run several times, but the temperature did not reach 71 °C at the dish surface. The operator is to obtain a waterproof dishwasher thermometer, run the dishwasher, and confirm that a temperature of 71 °C is achieved at the dish surface. If this temperature cannot be reached, perform the necessary repairs. F2.3D - No surface sanitizer was available. To eliminate pathogens on food contact surfaces, an approved sanitizer must be used (e.g., chlorine solution: 100 - 200 ppm, quaternary ammonium compounds: 200 ppm, or accelerated hydrogen peroxide: 500 ppm). Obtain and use an approved sanitizer for all food contact surfaces and verify the concentration using test strips.

- Observation(s): Lights in the kitchen did not have shatterproof covers. Fragments of glass may contaminate food and food contact surfaces if a light were to shatter. Install shatterproof covers on all lights.
