- No hand washing was observed throughout the duration of the inspection. Education was provided. Please ensure that hand hygiene is performed between different task.
- 06. Are appropriate food handling practices and plans in place to ensure that food is handled in a manner that makes it safe to eat?
- Sliced Donair meat from the cone was stored directly in the prep cooler without receiving a secondary cook step. The operator was educated on the proper procedures for processing Donair meat. Following the secondary cook step, the cooked meat can either be:- Served immediately to the customer OR- Kept hot above 60C OR - Rapidly cooled and stored in the cooler for later use.**Please see handout for details on procedures for processing Donair.
- 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
- **Some bulk food supplies had cups without handles for scoops.** The operator was observed to dispense multiple toppings with same bare hands, coupled to the fact that hand hygiene was not observed throughout the duration of the inspection. This practice may result in the cross contamination of other toppings on the prep cooler inserts.ACTION REQUIRED:1) Provide tongs for dispensing toppings from the prep cooler inserts.2) Provide scoops with handles in all bulk supply containers.
