    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Both hand wash sinks in sushi/omakase kitchen were used as prep sinks to soak vegetables in bins.- Ensure hand wash sinks are not obstructed to ensure staff have access at all times.- Bins were removed from sinks at time of inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) Two lights not working in drink walk-in cooler. Walk-in still has one sufficient light.- Repair the two lights.2) Floor tiles pitted in front of the dishwashing machine.- Repair the tiles and ensure surface is smooth, non-absorbent, and easily cleanable.3) Electrical socket panel missing in vegetable prep room in basement.- Replace socket panel.4) Ceiling panels missing in vegetable prep room and dry storage room in basement. Operator stated previous water damage was repaired in ceiling.- Replace the ceiling panels and ensure surface is smooth, non-absorbent, and easily cleanable.

      • Accumulation of dirt and debris under the dishwashing machine.- Please clean this area and ensure regular cleaning is done.

      • Fly light was hung in the food prep area above the front chest freezer.- Remove this light and relocate if needed to an area away from food prep areas, food equipment, and food/utensil storage areas.- Light was removed by head chef right away.
