      • No sanitizer on site.Obtain an approved sanitizing solution to use on food contact surfaces and in dishwashing procedure. As chlorine test strips were available, ensure to use a chlorine (bleach) sanitizing solution.

      • No drying rack on site.Obtain a drying rack for air drying of dishes/utensils.

      • Mobile ran out of water in trying fill the sinks 1/2 full of warm water.Ensure sufficient volume of water is present to conduct the hot water test.
