- A prep container with deli meat was being thawed at room temperature and was measured at 11°C. Frozen meats were being thawed at room temperature. The operator moved all items into the walk-in cooler as instructed. Please ensure staff are practicing proper thawing methods such as underneath cold running water or in the fridge.

- The bucket of sanitizing solution in the front preparation area was measured at a concentration of 50 ppm QAC. The issue was brought to the attention of the operator who refilled the bucket. After refilling the bucket, the concentration was measured at 400 ppm QAC.
