      • The chlorine sanitizer in the knife holder measured at 10ppm.**Ensure chlorine sanitizers are maintained at 100ppm and are routinely monitored.-The service staff mixed chlorine sanitizer to 100ppm during the inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A container of sauce under hot holding measured at 34 degrees C. The staff on duty indicated that it had been set out about 4 hours prior.**Please adjust/repair the hot holding unit to ensure it maintains adequate temperatures of 60 degrees C or above.- The service staff discarded the container of sauce during the inspection.

    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Paper towel dispenser at the three compartment sink was in disrepair. Equipment would not dispense paper towel.Operator will repair/replace.Other hand washing sinks were accessible. Liquid soap and paper towel were provided. Gloves are worn when prepping foods. The importance of hand washing prior to glove use was discussed.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • There was a leak off of the dishwashing sink faucet.Please ensure leak is repaired.
