      • A bag of flour and two cardboard boxes containing food items were observed stored directly on the floor in the dry storage room. The operator relocated them to the storage shelve. All food items must be stored at least 6 inches off the floor to prevent contamination from dirt, moisture, or pests.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • A bleach/chlorine sanitizer was measured at 200ppm with bleach/chlorine test strips. Ensure that bleach/chlorine sanitizer is maintained at 100ppm. The operator prepared a 100ppm bleach/chlorine sanitizer during the inspection.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. A piece of red duct tape was observed on the wall behind the one-compartment sink which is not smooth and easy to clean. 2. The paint on the walk-in cooler door was observed to be wearing off and is no longer smooth and easy to clean. 1. Ensure that the indicated tape is removed and/or replaced with a material that is durable, smooth and easily cleanable.2. Ensure that the indicated surface is painted and/or sealed to be smooth and easy to clean.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • A buildup of dust was observed on the shelving unit across from the grill-line. Ensure that the indicated area is cleaned and sanitized.
