    • FMV1.1 Does the base of operations meet the requirements of the Mobile Food Premises Guidelines?
      • Observation(s): FMV1.1C Written Food Handling Procedures must reflect changes to food storage, food processing and food preparation areas. The 2400 Ord Road base of operations is intended for overnight parking only and is not equipped with a kitchen for food preparation /processing and food storage. See comment under F3.1A&B
      • FMV1.1C Written food handling procedures must address changes to the food storage, food processing, and food preparation areas if not the approved base of operations.
    • F2.1 Does the facility have proper monitoring supplies?
      • Observation(s): Reliant prep cooler doesn't have a thermometer
      • F2.1B A thermometer accurate within 1 °C must be available to monitor processes.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): damaged part of the wall ( by the hand wash sink) needs repair to ensure exposed finish is smooth and impervious to moisture ( cleanable) no light covers for the two sets of light fixtures ( tubes)-operator to confirm if the bulbs are shatterproof
      • F2.5B The premises must be properly constructed and maintained in good, clean and sanitary condition.
      • F2.5J Artificial lighting must have shatterproof covers or shatterproof bulbs.
    • F3.1 Does the operator have a valid operating permit or approval to operate?
      • Observation(s): F3.1A & B Pending-Operator to seek approval and/or for the kitchen where PRE-cooking of proteins and temperature controlled storage of PHFs. Once that kitchen has been approved for operator's use, then this permit will be approved ( see comment under FMV1.1C)
      • F3.1A A valid permit to operate must be posted in a conspicuous location.
      • F3.1B Operator must have health approval to operate.
