- 1. Outside BBQ area-Floors, walls, ceiling, canopy, and equipment are all greasy covered in dust from being exposed to the outdoor environment and food activities. I was assured the facility would be cleaned prior to use but a very throughout cleaning is very needed-The curtain intended to separate the outdoors from the indoors is very dirt too. A more durable and engineered surface might assist better with the separation and protecting the cooking from the outdoor environment-Walls are a rough wood finish. Walls are required to be smooth and cleanable and impervious to moisture. Please replace the wall coverings in cooking areas-Ceiling in the cooking area is soffit material. The holes are not adequate for a ceiling in a food handling space. The material should be smooth cleanable and impervious to moisture2. The dish pit-The ceiling surface is stucco. The ceiling is required to be smooth and cleanable. Please fix this
