      • Food was being overfilled in a metal insert in the stand up freezer. The food was touching the exterior of a french fry bag.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Cooling of tomato sauce is taking about 5-6 hours in a very large pot.Ensure the tomato sauce happens quickly - from hot to room temperature within 2 hours and then to 4C or less within 4 hours. Put the tomato sauce into smaller metal, shallow pans, stir often, put in an ice water bath, etc.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Quat test strips expired 2015.Ensure test strips are not expired. Get new ones.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • There is no barrier/ separation between the customer area and the food prep area.Please have a physical barrier in place.
    • 26. Have plans for construction or alteration of this facility been submitted for approval?
      • Renovations started but the plans were not sent to Environmental Public Health (EPH) for review prior to starting renovation. Owner was asked to send in the plans so they could be reviewed. Once reviewed, EPH will send an email.
