- Sub divided food items such as deli meats were in unlabeled bags.Must be labeled with item ID and date
- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- Debris and crumbs on the shelves below prep counter - a thorough clean up and daily ongoing maintenance. Used and dirty cloths and sponges on counters all over kitchen- staff discarded sponges and put rags into the laundry bin- one cloth per task, hold in chlorine solution or paper towel

- Various chemicals were direct adjacent to food related items under teh large prep counter
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?

- Outstanding issue: Staff unable to demonstrate proper steps to wash and sanitize food prep and client re-use items (jugs, knives etc) Discussed, wrote out steps and provided a poster for 2 sink method which would best be accomplished in the two industrial size sinks in storage room.
