    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • - At time of visit observed one upright freezer with elevated temperature (+20ºC), this was due to unit being unplugged.- Staff member present discarded all the foods in the freezer, unit plugged back in.All other units in use were observed to be in good working order
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • - Observed that mechanical dishwasher sanitizer solution was not functioning correctly,- New jug of sanitizer attached to machine and line purged, Sanitizer cycle now functioning properly.
