- Raw proteins (pork belly) stored on top of fresh produce (broccoli) in walk in cooler.
- Meats should be stored either separate from ready to eat foods/veggies or in dedicated area. Operator moved pork to meat rack.
- Inadequate Insect / Rodent Control
- Feathers observed in back food storage area. Live animals should not be present in food facility.
- Operator to patch up back room wall/ceiling and clean to remove debris and loose feathers.

- Operator stated that IR gun is used daily to monitor temperature but no documentation is available for audit. Record temperatures daily (2x) on a monitoring log book. Comments Routine health inspection conducted. Hand wash station fully stocked with soap, paper towel, hot and cold water. Coolers at 4°C or less, freezer at -18°C or less, and hot holding at greater than 60°C. Viper sanitizer at 500 ppm hydrogen peroxide. Label bottles. Dishwasher sanitizing at 100 ppm chlorine. Level 1 and 2 FoodSafe certified staff onsite. Proper thawing practice followed (cold running water). Monthly routine pest control in place, activity is controlled. Follow up on July 21, 2026.
