    • 29(1) An operator of a food establishment must have a maintenance, cleaning and sanitation program in place to control the risk of contamination of food, equipment, utensils and other facilities in the food establishment.
      • Low-temperature dish washer measured 0ppm chlorine sanitized. Dishes were moved to the three-compartment sink for manual dish washing, rinsing, and sanitizing at time of inspection and service technician was contacted to service the machine. Chlorine sanitizer must measure 100ppm.
