- The walk-in cooler has flaking paint. This needs to be scraped and refinished. Please let me know when this has been completed.

- A sanitizer solution was not being used. The operator is sensitive to bleach, however alternate sanitizers are available such as quaternary ammonium, accelerated hydrogen peroxide, etc. Please ensure that an approved sanitizer solution is available and mixed at all times.
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- The dishwasher initially had no measurable chlorine but after priming it for a few minutes, a 50ppm solution was obtained. It is strongly recommended that the dishwasher be primed to remove air bubbles that form while the dishwasher isn't in use overnight.
