      • As discussed, dishes must be washed, rinsed to remove detergent residue, and then fully submerged in an approved sanitizing solution for a minimum of two minutes before being removed and allowed to air dry.Approval was not granted for the preparation and cooking of raw meat products or intermediate-level food handling activities due to insufficient equipment capacity to safely support these activities.The current equipment is oversized in relation to the available warewashing facilities. Food contact equipment and utensils are required to be adequately washed, rinsed, sanitized, and allowed to air dry. The existing sinks are not large enough to properly accommodate the size and quantity of equipment being used, making it difficult to ensure effective cleaning and sanitizing.The equipment observed is more consistent with what would typically be found in a larger commercial food service operation where appropriate warewashing capacity and infrastructure are available.Large containers used for popcorn storage and mixing were approved, as these items can remain in an appropriate sanitizing solution when required and present a lower risk. However, the available equipment and warewashing capacity are not sufficient to support additional food handling activities, particularly when raw meat products are being prepared and served due to the increased risk of cross-contamination.

      • Approval was not granted for the preparation and cooking of raw meat products or for intermediate-level food handling activities, as the facility does not currently have adequate equipment to safely support these activities.

      • Uninspected eggs were observed in the fridge in the kitchen. These eggs were not labeled to identify them as uninspected.Homemade goodies were also observed in the display fridge and back fridge with a label 'Ben & Simons Pie Shoppe' - this is not a commercial food establishment. Please remove these from the premises.

      • Food that is not from a commercial source (farmers market) was observed for sale in the store i.e. Little Europe and Ben & Simon Pie Shoppe labels. This is not allowed. All foods must come from a commercial source. Please remove.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Facility has a lot of things going on in a small space. As discussed, the popcorn bins that are empty need to be washed and sanitized and please remove the clutter near the back door.
