    • Critical Improper Cleaning, Sanitizing of Equipment and Utensils
      • There was no food-grade surface sanitizer available at the time of the inspection.
      • A 200 ppm chlorine surface sanitizer was prepared in a labelled spray bottle at the time of the inspection. Ensure that a food-grade surface sanitizer is available at all times.
    • Improper Construction / Maintenance of Establishment
      • The vinyl on the backsplash in front of the two-compartment sink is peeling and has exposed raw wood.
      • Repair or replace the noted backsplash with a smooth and nonporous surface that is easy to clean.
    • Food Safety Plan/Sanitation Plan
      • Chemical test strips were not available on-site. Surface sanitizer concentrations are not being monitored daily.
      • Purchase chemical test strips for the food-grade surface sanitizer. Monitor and record the concentration of the sanitizer at least once daily. Comments A routine inspection was conducted alongside the Chef and Director. • Overall, the premises is clean and well maintained. • The permit to operate is posted in a conspicuous location. • At least one food handler holds a valid FOODSAFE level 1 or equivalent certificate. • Hand washing stations are equipped with hot and cold running water, liquid hand soap, and single-use paper towels. • Most food preparation surfaces are smooth, nonporous, and easily cleanable. • Food handling and storage practices are correct. Foods are protected from contamination during storage. • Refrigeration temperatures were measured at or below 4°C. • Hot-holding temperatures were measured at or above 60°C. • The final rinse temperature of the high-temperature dishwasher was measured at 74.2°C at the plate. • Sanitizer and temperature logs are maintained and available for audit. • No evidence of pest activity was noted at the time of inspection.
