- All cold food shall be stored at a temperature of 40F or less. A large lexan container dated 9/16/10 with 5" deep mashed potatoes inside at a temperature of 63.2 f was found in the walk-in cooler. Approximately 50 pounds of mashed potatoes worth $30.00 was discarded at this time.
