- All food should be properly protected from contamination during storage, preparation, display, service, and transportation. AN OVERHEAD CEILING IS NEEDED IN THE DISHROOM AREA AS A BARRIER FROM EXPOSED SEWAGE LINES & AIR/VENTILATION DUCTS ON THE CEILING.

LEAKS AT AN ELBOW PIPE UNDER THE DISHMACHINE & AT THE WATER-RELEASE VALVE OF THE SAME MACHINE MUST BE FIXED.
