    • 209 - Aliments non protégés contre la contamination [art. 12 a)]
      • Observation: Some foods are stored on the floor. Scoop handle touched the flour. Food is put in handwash sink. (Public Health Significance) - Food placed on the floor or handwash sink can easily be contaminated by pest, dust and other contaminants. Scoop handles are high touch area and can contain contaminants and pathogens, which can cross-contaminate foods.
      • Corrective Action: Operator to ensure handwash sink is for handwashing only. Operator to store food at least 15cm off the floor and store scoops away from food at all times.
    • 301 - Matériel, ustensiles et surfaces de contact avec les aliments non entretenus en état sanitaire [par. 17(1)]
      • Observation: Part of the ceiling of the walk-in cooler turns black. The wooden floor of the walk-in cooler peels off. (Public Health Significance) - black color on the ceiling may indicate the presence of contaminants such as mold. Uneven floor can trap dust, contaminants and allow pest infestation, which is hard to clean and sanitize, increasing the risk of food contamination.
      • Corrective Action: Operator to ensure the floor and ceiling of the walk-in cooler are smooth, non-absorbent and sanitary at all times.
    • 305 - Conditions observées qui peuvent permettre l'entrée, le port et l'élevage de parasites [art. 26 b), c)]
      • Observation: The weathering strips on the side door of the kitchen are worn out. (Public Health Significance) - any gap in the wall and door can allow the entry of pest, increasing the risk of food contamination.
      • Corrective Action: Operator to ensure the door is tightly sealed at all times to prevent pest entrance.

    • 308 - L'équipement/les ustensiles/les surfaces de contact avec les aliments ne sont pas en bon état de fonctionnement [art. 16 b)]
      • Observation: Les joints de plancher de la glacière de marche ont été élargis et non lisses. (importance pour la santé publique) - Une surface lisse assure un nettoyage et une désinfection efficaces, empêchant la croissance et le port d'agents pathogènes, réduisant ainsi le risque de contamination alimentaire.
      • Mesures correctives : L'opérateur doit sceller toute indentation ou joints élargis sur le sol et s'assurer que sa surface est lisse en tout temps.
