      • OBSERVED THE LOWER SURFACE OF VARIOUS CABINETS IN THE BAKING/PASTRY AREA WITH FOOD AND DIRT DEBRIS. INSTRUCTED MANAGER TO CLEAN AND MAINTAIN SURFACES.

      • OBSERVED THE FOLLOWING SINKS WITH LEAKS: -THE 3-COMPARTMENT SINK IN THE FAR REAR OF THE BAKING/PASTRY PREP AREA HAS A LEAK AT THE HOT WATER KNOB ON THE LEFT FAUCET AND A LEAK AT THE HANDLE UNDERNEATH THE WASH COMPARTMENT SINK. -LEAK UNDERNEATH AT THE HANDLE OF THE WASH COMPARTMENT SINK AND AT THE PIPE UNDER THE SANITIZING COMPARTMENT ON THE 3-COMPARTMENT SINK IN THE EAST CENTER KITCHEN OF THE BAKING/PASTRY PREP AREA. -LEAK AT THE PIPE UNDER THE REAR SANITIZING COMPARTMENT OF THE 3-COMPARTMENT SINK IN THE SOUTHWEST KITCHEN AREA. INSTRUCTED MANAGER TO FIX ALL LEAKS AND MAINTAIN GOOD PLUMBING.

      • OBSERVED EVIDENCE OF PEST ACTIVITY. APPROXIMATELY 80-100 MICE DROPPINGS WERE OBSERVED IN THE FOLLOWING ARES: PHASE 1 KITCHEN ON THE INSIDE OF THE LOWER COMPARTMENT OF THE DEEPFRYING UNIT, ON THE FLOOR NEAR THE DISHWASHWARE STORAGE CAGE IN THE MIDDLE OF PHASE 1 AND 3 KITCHEN, ON THE FLOOR ON THE SIDE OF THE MINI REFRIGERATOR AT A COOKING STATION ACROSS FROM THE DRAIN BOARD OF THE THREE COMPARTMENT SINK IN PHASE 3 KITCHEN. IN THE BAKING AND PASTRY KITCHEN ON THE FLOOR BEHIND THE DOUBLE DECKER OVEN AND THE PIZZA OVEN IN BAKING AND PASTRY KITCHEN, ON THE FLOOR BY THE BY THE HOBART STORED UNDER THE DRAINBOARD OF THE THREE COMPARTMENT SINK IN PHASE 1 BAKING AND PASTRY KITHCEN AND ALSO BEHIND THE PROOFER. IN THE DRY STORAGE CLOSET ON THE FLOOR AT THE REAR IN THE CORNERS WHERE THE SLIDING STORAGE CAGES WERE LOCATED AND ON THE SIDES OF THE SHELVING UNITS AT THE FRONT OF THE SAME SAID CLOSET. IN THE COLD STORAGE CLOSET OBSERVED MICE DROPPINGS UNDER THE THREE COMPARTMENT SINK. SOME MICE DROPPINGS WERE REMOVED FROM SOME AREAS, BUT DID NOT OBSERVED THOSE AREAS BEING SANITIZED AT THE TIME OF THE INSPECTION. INSTRUCTED TO ELIMINATE PEST ACTIVITY, CLEAN AND SANITIZE AFFECTED AREAS AND RECOMMENDED CONTACTING PEST CONTROL FOR A SERVICE. PRIORITY FOUNDATION 7-38-020(A), CITATION ISSUED
