    • F2.1 Does the facility have proper monitoring supplies?
      • Observation(s): All departments had expired sanitizer testing strips. For the meat department will also need chlorine sanitizer testing strips also. These testing strips are required to verify if the solution can provide adequate sanitizing action to kill pathogens. At the time the sanitizer have a dispenser and were measured within correct ranges. Corrective Actions: • Ensure all departments have valid sanitizer testing strips.
      • F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): • Bakery/Deli area had two uncovered fluorescent lights, these are at risk of shattering and causing possible physical contamination of food items and equipment in the area. • Bakery/Deli Area it was observed that the proofing/baking machines had a small pool of water under the machines. The operator stated that there is a possible leak/issue with plumbing in one of the machines and that a technician will need to be called into to assess and fix this. Corrective Actions: • Ensure that all lights are either in shatterproof covers or are shatterproof lights. • For water leak, you must arrange with an technician/professional to assess the issue and resolve it. To mitigate the risk and possible sanitation issue that can occur, staff will need to be cleaning this area regularly until repair tech can come in. EHO will follow up with this to assess status of repair or replacement.
      • F2.5B The premises must be properly constructed and maintained in good, clean and sanitary condition.
      • F2.5J Artificial lighting must have shatterproof covers or shatterproof bulbs.
    • F2.7 Are there handwashing stations available and properly supplied?
      • Observation(s): • Paper towel roll was provided but was not in a dispenser, when not in a dispenser there is a risk of cross contamination of the entire roll when handling it. • Corrected During Inspection (CDI): Garbage bin was placed beside the hand washing station. • CDI: Meat Area the hand washing station was blocked with items, these were removed and the operator was educated and instructed to maintain this hand washing station as accessible at all times. Operator to educate other staff on this. Corrective Actions: • Ensure that the paper towel is in a dispenser or in a way that it only dispenses a single paper towel or dispenses the paper towel without possibly contaminating the entire roll.
      • F2.7C Handwashing station must be supplied with single-service product for drying hands.
      • F2.7E Handwashing stations must remain accessible at all times.

      • Observation(s): • Liquid soap in dispenser was very low, the operator was instructed to immediately re-stock this. Corrected During Inspection (CDI), operator had replaced with new and full liquid hand soap package.
      • F2.7B Handwashing station must be supplied with liquid soap in a dispenser.
