      • The handwash sink paper towel dispenser was empty and out of paper roll.Ensure the hand sink is adequately supplied with serviceable automated paper towel dispenser.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The washroom is out of order, work order already initiated for the plumber to fix the flushing unit.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The cooler and freezer handles were covered in dirt/batter.Ensure the refrigeration and freezer unit handles are always kept clean free of flour/batter.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Quats sanitizer concentration was measured below 200 ppm. Operator prepared a fresh batch that was at 200 ppm during the inspection.Ensure to replace the Quats sanitizer every 3-4 hours or depending on use. Quats concentration tends to decrease with time/usage.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Ensure the flour scoop handle is always out of the bulk food to prevent food contamination. Operator corrected by removing the scoop to the dishwashing area for cleaning.

    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Frozen chicken in a container observed thawing in the 3-compartment sink at room temperature. Operator was educated on proper methods of thawing/defrosting frozen food either under cold running water, overnight in a cooler or microwaving and cooking directly. Operator turned on the cold running water during inspection. The chicken temperature was under 4C at the time of inspection.
