      • The wall mounted wedgie fry slicer was dirty.Corrective ActionPlease ensure that this piece of equipment is cleaned after each use.
    • 24. Is solid and liquid waste being managed in a suitable manner?
      • The one hand wash sink in the food prep kitchen area - has a condensate drain hose coming from a wall mounted ventilation unit to drain into this sink.A more sanitary way to have the condensate drain discharge to the plumbing pipe under the sink is by installing a domestic dish washer drain connection directly below the outlet drain for this sink. This way the hose is not draining into the basin of the sink or getting in the way of using the sink.
