- Initially the dish washer was not operating or sanitizing properly.Operator had the dish washer reset and it was working properly in the afternoon.A photo from the operator showed that the final rinse temp was at 187 F/85 C - satisfactory.Note - the facility also has a 2-comp stainless steel sink for ware washing as well.
