- 1) Used tongs, a pizza cutter, and other utensils were left out at room temperature without being kept in an ice water bath below 4C, a hot water bath above 60C, or a steady rotation of clean utensils every 2 hours. Kitchen utensils at room temperature can promote the growth of harmful bacteria.The operator agreed to ensure that used utensils will be in rotation with clean ones every 2 hours. Dirty utensils will go directly into the dish pit where they will be cleaned and sanitized.2) Baking pans used to bake cookies from the night before were observed to be covered in grease and food debris.Please clean and sanitize the baking sheets, ensuring they are properly cleaned and sanitized after each use.
