- Floor drain for the pipe beside the deep fryers has a large opening.
- Corrective Action(s):
- Install screen cover for this drain to prevent entry of pests into the kitchen.

- There is heavy grease build up in the fume hood ventilation above the frying station.
- Walls, floor and pipe beside the frying station are also covered in grease.
- Corrective Action(s):
- Thoroughly clean back splash in the ventilation area as well as the back splash
- for the fryers. Use heavy degreaser to remove oil/grease build up on the wall and
- drain pipes beside the fryers.
