- Observation(s): Drying some dishware on towels. Towels are absorbent and may harbor bacteria which may contaminate clean dishware. Corrective Action: Air dry dishware on a non-absorbable surface. Recommend obtaining a drying rack that is easily cleanable. Ensure the high heat/sanitizing buttons are pushed on the dishwasher when running.
