- Sanitizer tested at 0 ppm. There was an empty bleach bottle on site. Operator was instructed to immediately get a new bottle of bleach prior to any food handling. Sanitizer was mixed and tested at 100 ppm. Test strips were available to monitor concentrations.
- 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
- Food were being uncovered in the cooler (such as chicken and sliced mushrooms). Foods were covered with lids during the inspection.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- Hand sink was missing paper towels. Owner purchased and restocked the paper towels. Please ensure hand sink is equipped with liquid soap and paper towels at all times to facilitate hand washing.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- There is a raw wood palette on top of the pizza oven being used to store pizza boxes on. In addition, there is a raw wood shelf installed on the side of the pizza oven. Please ensure there are sealed/painted so they can be easily cleaned and are impervious to moisture.

- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- 2 compartment sink is available for manual dishwashing. There was no detergent/rinse aid available for the mechanical dishwasher. Dishwasher reached 190F at the gauge and 165F at the plate level. This is satisfactory.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- The back door weatherstripping needs to be replaced. There are plans to replace the door shortly.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- 1. The baseboard in the washroom is missing. Please have this installed. 2. The walk in cooler is missing its trim around the door. Please have this installed.
