      • Raw chicken was stored above pastry shells in the basement walk-in cooler. - Corrected during inspection and employee moved pastry shells so that nothing was stored below the raw meat.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • No sanitizer was detected in the mechanical dishwasher. The tubing for the sanitizer and detergent were hooked up to the wrong products and the detergent was empty. The tubing was switched back to the correct position during the inspection, and sanitizer was able to be detected. More detergent was ordered and arriving later that day.- Manually wash dishes and use the dishwasher to sanitize only until more detergent arrives. Routinely check the sanitizer concentration of the dishwasher.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The plate that holds the ice scoop for the basement ice machine was dirty and covered in a layer of dust. - Routinely wash and sanitize the plate and the ice scoop.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) Ceiling in the main kitchen has a build-up of dust and grease on it. - Please clean the ceiling. 2) Mold growth was observed on the ceiling of the basement walk-in cooler. - Please clean the ceiling.
