  • Protecting food from contaminationHigher risk

This covers how food is stored, prepared and displayed: raw meat kept away from ready-to-eat food, food covered and stored off the floor, and nothing dripping or splashing into it. Cross-contamination from raw to cooked food is a direct route for salmonella and E. coli.

    • Critical Food Not Protected From Contamination - Other Sources
      • QUAT sanitizer buckets measured 0 ppm. An investigation found that the supplier hooked up the multi-surface and QUAT sanitizer lines after they were replaced the night before (May 20, 2026) at close.
      • This issue was corrected on site. The lines were replaced and flushed. QUAT sanitizer measured between 200 and 300 ppm. All sanitizer bottles and buckets were replaced. The incorrect sanitizer had not been used yet, as the restaurant had just opened, so no surface cleaning was required. Check first that the sanitizer bucket or bottle is made at open to ensure that the sanitizer is correct and at the right range: 200 to 400 ppm QUAT.
    • Food Not Protected - General
      • Whipped cream in the bar area, and garlic butter and bacon in the kitchen, were held at room temperature for around one hour, from the time of opening, and measured between 13°C and 17°C.
      • Store whipped cream on ice or in the fridge. Store garlic butter and bacon in the coolers when not in use. This violation was corrected on site; all potentially hazardous foods were moved to the coolers. Comments A routine inspection was conducted today. All hand sinks are fully stocked with soap, paper towel, and hot and cold water. All fridges measure 4°C or lower; the freezers are at -18°C or lower; all hot holding units measure 60°C or higher. The high temperature dishwasher measures 82.3°C at plate level. The low temperature dishwasher is not working at the time of the inspection; chlorine sanitizer is not being pumped out. The operator saw that no chlorine was detected during the opening check and called a mechanic who will repair the dishwasher around noon today. The dishwasher is not in use by the operator while it is not working. The operator will use the high temperature dishwasher as needed or if the low temperature dishwasher cannot be repaired today. The low temperature dishwasher sanitizer log is well maintained and up to date. Overall, the facility is clean, with no signs of pests at the time of the inspection. NOTE: Maintain temperature logs and QUAT sanitizer checks twice daily going forward, around opening and closing. NOTE: E-mail the Environmental Health Officer when the glass washer is repaired, and include a photo of chlorine sanitizer test strips after it is repaired. The EHO will confirm the repair by May 25, 2026.
