- Observation(s): - Observed 5-6 boxes partially or fully filled with sauce bottles (pepper sauce, green seasoning, and jerk BBQ sauce) stored at room temperature in a broken reefer trailer. The operator stated that these bottles are kept for testing purposes and are not intended for sale. Discussed with the operator regarding the storage of multiple boxes and unsafe food products must be discarded. Ensure food production is in accordance with the available refrigerated storage capacity.

- F2.1 Does the facility have proper monitoring supplies?
- Observation(s): No temperature logs observed for the cooler set up at the pick-up location to store sauce bottles. Ensure temperature of this cooler is being monitored and logs are maintained. Ensure probe thermometer is available to monitor internal temperature of large sauce containers stored in upright cooler.

- Observation(s): Reefer trailer used to store sauce bottles at the storage facility noted to be broken. Upright cooler and chest freezer are available at the storage facility to store potentially hazardous foods, and only half side of the upright cooler observed to be used for storing sauce bottles. Ensure food production is in accordance with the available refrigerated storage capacity.
