- 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
- Observation: 1) Ceiling, air diffuser and light fixtures above the cook line in the kitchen have a noticeable build-up of debris (fuzz) which may become dislodged and contaminate foods. 2) Wire rack shelves in the walk-in cooler (by the dry storage room) are rusting and have a noticeable build-up of what appears to be food debris. Rust and food debris can become dislodged and contaminated foods.
- Corrective Action: 1) All surfaces in the kitchen and food storage areas must be kept clean and in a sanitary condition. Ceiling, air diffuser and light fixtures above the cook line must be cleaned and kept clean to prevent the build-up of debris. Also, the air handling system should be inspected to determine how this condition developed. 2) Wire rack shelves in the walk-in cooler and in other parts of the facility must be cleaned and refinished, or replaced. Wire rack shelves must be kept clean and in good condition with a surface that's smooth, impervious to moisture, durable, easy to clean, and non-toxic.
- 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
- Observation: 1) Lights throughout the kitchen & food storage areas are without covers which could result in glass contaminating foods if a bulb is broken. 2) Prep cooler on cook line has a build-up of ice on the cooling unit which is affecting the ability of this cooler to maintain foods at or below 4°C. 3) Particle board shelves by cook line are damaged, worn and coming apart. Particle board is not a good material for use in a kitchen as it's too easily damaged in high use/traffic areas, and looses structure when it becomes wet. 4) Floor tiles (ceramic & linoleum) along the cook line and in other parts of the kitchen and food storage areas are cracked and/or chipped. 5) The finish on the wood shelves in the dry storage room is damaged and worn to such an extend that the bare wood has been exposed. 6) Drywall finished walls throughout the kitchen and food storage areas are damaged and must be repaired or refinished. 7) Plastic cutting board top on the prep table across from 2-compartment sink is damaged, worn and covered with deep cut marks to such an extent that it appears it can no longer be properly cleaned as it's visibly stained. 8) Walk-in freezer has a build-up of ice on or under parts of the cooling unit. If air movement through the cooling unit becomes blocked with ice, the walk-in freezer may not be able to maintain a temperature of -18°C. Also, water dripping from the cooling unit may contaminate foods. 9) Water filter for the ice machine appears to be very old and may have not been changed in a very long time; however, this may not be a concern if the filter housing is empty.
- Corrective Action: 1) All lights must have covers to protect bulbs or fixtures could be replaced with ones where this risk is not present (e.g., plastic LED fixtures and/or bulbs). 2) Defrost prep cooler on cook line and have cooler repaired to ensure this issue does not reoccur. 3) Particle board shelves must be maintained in good condition with all surfaces properly finished (i.e., smooth, impervious to moisture, durable, easy to clean, and non-toxic). All worn & damaged particle boards shelves throughout the kitchen & food storage areas must be replaced with a suitable material that's properly finished. 4) Damaged floor tiles in the kitchen and food storage areas must be replaced to provide floors that are smooth, impervious to moisture, durable, easy to clean, and non-toxic. 5) All wood surfaces in the kitchen and food storage areas must be properly finished or refinished to provide a surface that's smooth, impervious to moisture, durable, easy to clean, and non-toxic. 6) Drywall finished walls must be kept in good repair to provide a surface that's smooth, impervious to moisture, durable, easy to clean, and non-toxic. All damaged drywall in the kitchen and food storage areas must be repaired and refinished, or refinished with a more durable material (e.g., Fibre Reinforced Plastic (FRP) wall panel). 7) Plastic cutting board top on the prep table across from 2-compartment sink must be refinished, replaced or removed. All cutting boards must be kept in good condition to ensure they can be properly cleaned & sanitized, and/or replaced or a regular basis. 8) Walk-in freezer must be defrosted and the drain line must be inspected to ensure it's not blocked and the heat trace is working properly to prevent the drain line from freezing. 9) Water filter for the ice machine must be inspected and if it is to be used, filter must be replaced per manufacturer's instructions. If water filter won't be used, the filter housing must be removed.
