      • Quats solutions measured at 50 ppm , needs to be at minimum 200 ppm.- 200 ppm solutions were prepared.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Initially the probe thermometer could not be located for measuring hot holding temperatures.- Thermometer was located and stored in a location where staff can easily use.

    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Observed staff prepping foods on the front table of the booth with no sneeze guards in place. Corrected. - All food handling to be done in the booth in a manner that protects it from possible public contamination.
