- No probe thermometer was available.Ensure a probe thermometer is available to check internal food temperatures.

- When staff was asked to check the sanitizer solution, quat test papers were used even though a bleach sanitizer is used.Ensure staff use the appropriate test strip to check the sanitizer solution. Remove all quat test strips if not using quat onsite. Staff found chlorine test papers to use for the bleach sanitizer solution.
