    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • 0 ppm sanitizer detected in the solution that wiping cloths are immersed in.- Staff prepared 200 ppm quat sanitizer solutions. Test the concentration and change the solutions frequently.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The Cold Table (front) was operating at 12C. Foods in the unit were also measured at 12C. High risk perishable foods must be stored at less than 4C. The most recent temperature log entry for the day entered at 36F (2C). Foods were relocated to the other coolers until a temperature of less than 4C is maintained.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The following areas require cleaning to remove dried food splashes/food particle accumulation: The wall by the washsink and the floor by the electrical panel around the pipe.

      • A gap is noted at the bottom of the front doors.- All doors must be tight sealing to prevent the possible entry of pests.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The metal storage shelves in the back kitchen are rusting.- Operator informs that new shelving has already been ordered.
