      • Staff jacket is hanging off of the "clean" dish storage shelving unit, jacket in contact with the ladles hanging here. Corrected

      • Peri sauces stored in between the cook line equipment measured at 14C. Inadequate ice water bath setup as the containers are not fully immersed in the ice-water.- High risk foods must be stored at less than 4C or greater than 60C.

      • 1.The following areas have an accumulation of grease and require cleaning: under and behind the cook line equipment, the exhaust hood around the filters and the exteriors of the large garbage cans.2. Remove the grey electrical tape that is on the floor around the grease trap lid. The tape is dirty and traps moisture which can result in pest problems.

      • Small inserts of peri sauce located in the walk-in cooler measured between 11-15C. Determined that the sauces had been brought out for the lunch service rush and stored with no temperature control.- Perishable foods must be stored at <4C or >60C.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • The back facility door which opens into a public hallway used for food deliveries was left open. Gap also noted at the bottom of this door.- Doors must be kept closed and have a tight seal to prevent the possible entry of pests.
