    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • - The high temperature dishwasher is not adequately sanitizing dishes/utensils. The maximum temperature inside the dishwasher, after 6 wash cycles, was measured at 66C. The temperature gauges appeared not to be working (the gauges were not moving at all when the dishwasher is running).The operator was directed to wash the dishes/utensils in the dishwasher and then manually sanitize them in the sink using a 200ppm QUATs sanitizer solution- 0ppm iodine residual was measured in the final rinse of the glasswasher. All the glasses shall be washed and manually sanitized in the kitchen using the 200ppm QUATs solution.ACTION REQUIRED:1) Repair the dishwasher and ensure that it is capable of achieving a sanitizing temperature of at least 71C at dish level or 82C on the manifold.2) Repair the glasswasher to ensure that it is dispensing at least 12ppm iodine in the final rinse.

      • Water source is a cistern with water hauled from Sherwood Park.** Quarterly water samples from the cistern are not being submitted for testing as required.ACTION REQUIRED:1) Take immediate action to submit a water sample for testing and going forward, quarterly water samples shall be submitted for testing as per the condition on your food permit.
