    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 3-door line cooler in front line area was @7-8 deg C for air temperature. Monitor and check the temperature of the cooler returns to 4 deg Celsius for food storage.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Operator did not have test strips onsite for both chlorine sanitizer testing (dishwasher use) and for smart power lactic acid/DDBSA (food contact surfaces). Operator provided invoice for purchase of both test strips today.
    • 14. Does the facility have an adequate supply of potable hot and cold running water and is the water sampled at required intervals?
      • Customer washrooms- automatic faucets tested and was cold water, did not reach lukewarm temperature for use. Please adjust to provide warm water use for use of handsinks in patron washroom

      • Bowls were observed being used as bulk scoops for multiple dry bulk foods. Please ensure all bulk scoops are equipped with a handle and stored in a manner that prevents cross-contamination.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Both the chlorine test strips used to test the dishwasher and the Smartpower test strips used to test the surface sanitizer were expired. Please discard the expired test strips and obtain new ones.
