      • Observation(s): No Quats or Chlorine test strips were on site. Chemical test strips must be available for all sanitizers to ensure sanitizers are used at the correct concentrations. Obtain Quats and Chlorine test strips.
      • F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): 1. Chlorine dishwasher did not provide chlorine to the sanitizing cycle. Chlorine levels must be at least 50ppm in a chlorine dishwasher to ensure adequate removal of contamination. Repair the dishwasher so that it provides at least 50ppm of chlorine. 2. Quats sanitizer was mixed with pine-sol and was too high of a concentration. Quats sanitizer must not be mixed with other chemicals, and must be at a concentration of 200ppm. Corrected During Inspection.

Operator was reminded to verify the sanitizer concentration on a regular basis and prior to use to ensure adequate amount of sanitizer is available to allow for effective food contact surfaces sanitizing.

      • Observation(s): It was discussed with chef that the food safety plan should be reviewed regularly (e.g. annually prior to the start of the season) to ensure it is up-to-date. Plan must reflect the actual procedures on site. For example, if cooling will be done (even on occasions), please indicate detailed step-by-step cooling procedures on the current food safety plan. Please revise food safety plan.
      • F3.3B Operator must maintain written food handling procedures that includes all potentially hazardous foods.
    • F3.4 Are written sanitation procedures (Sanitation Plan) current and available on site?
      • Observation(s): It was discussed with chef that the sanitation plan must include all items that need to be washed and sanitized. The plan must include the procedures as well as frequency of cleaning and sanitizing. Please revise sanitation plan.

      • Observation(s): Observed shelled eggs stored at room temperature. Discussed that all potentially hazardous foods must not be stored in the danger zone i.e. between 4C and 60C for more than 2 hours (total). After 2 hours, potentially hazardous foods must be discarded. CDI - corrected during inspection.
    • F3.7 - Are written food handling procedures (Food Safety Plan) current and available on site?
      • Observation(s): Please ensure food safety plan is updated to include detailed cooling procedures/steps. Please provide completed plan for review.
      • F3.7A - Operator must have on site a written food safety management procedure that includes all potentially hazardous foods.
      • F3.7B - Operator must maintain a food safety management procedure that includes all potentially hazardous foods.
      • F3.7C - Food safety management procedures must identify all critical control points.
      • F3.7D - Food safety management procedures must include critical limits for all critical control points.

      • Observation(s): NSF thermometers have been ordered and will be in place once they arrive. Currently an infrared thermometer is being used or temperature checks.
    • F3.3 - Is the premises construction and layout unchanged and in accordance with approved plans?
      • Observation(s): Premises floor plan was not submitted for review at the construction stage. Facility has been reviewed in "as built" condition. Please note that any future renovations or changes associated with the Permitted aspects of this lodge must receive approval through a health officer. No further action required at this point.
    • F3.4 - Are the premises, equipment and utensils designed and maintained to ensure safe and sanitary food handling?
      • Observation(s): 1. A wire bristle brush is being used clean the pizza forno oven. Please use a natural bristle brush instead as metal bristles can potentially be a health concern if ingested (much like the concerns surrounding metal bristle brushes for bbqs). Due to the nature of their storage, ensure all implements for the oven (pizza peel, wood tossing tools, etc.) are cleaned and sanitized prior to each use. Ideally store them off the floor. 2. Ice machine at wet bar indicates "cleaning required". Please follow manufacturer's instructions to clean and sanitize thoroughly. Do not use first batch of ice after cleaning.
    • F3.7 - Are written food handling procedures (Food Safety Plan) current and available on site?
      • Observation(s): A plan has been started but does not fully meet requirements. Please use the guidance documents to complete a comprehensive plan for your operation. Also include procedural considerations that may need to be in place due to open use nature of kitchen. Typically open use of the kitchen would not be permissible for the use of a Permitted kitchen, however due to the nature of the operation, it will be accepted should sufficient controls be in place to ensure food safety.

    I'm not sure where to even begin.There were 11 of us 6 adults 5 children/youth and we were all treated like kings and queens. The staff was beyond anything we could have asked for. We never lacked for anything and they waited on us like we were royalty.Lattes in the afternoon, YUM. The food was locally sourced and the highest quality. The chef plated our dinners and not only were they beautiful but delicious as well. Last but certainly not least was the lodge itself. The amenities were exceptional from the sound proof theatre room, hot tub, massage room, pool table, steam showers (in each room), indoor climbing wall (OMG the kids loved that), awesome beds, to the soaring ceiling with enormous timbers and railroad rails for stair rails and rail spikes for all the cabinet pulls.I could go on and on but I think you get the picture. There aren't enough adjectives. We loved our experince and would highly recommend Bison Lodge to everyone.

    We were lucky enough to have a birthday supper at the lodge. The ladies were unbelievable and we were treated to an amazing evening. Our Chef Moira spoiled us with a citrus salad that was so refreshing followed by perfectly cooked tomahawk steak and finished off the meal with a decadent chocolate cake. The portions were perfect and the atmosphere couldn't be beat. Thank you. Highly recommend going there

You and your staff went above and beyond to make our wedding week a very spectacular and memorable affair. We will never forget our Heli Wedding experience and 5 star stay at Bison Lodge.

    Incredible experience! I expected to have a great stay but did not think it could be as enjoyable as it was. For as majestic the mountain is right out your front door, it was difficult to venture outside as we did not want to leave the lodge! When we did leave to snowboard (right next door...), coming back was the most exciting part. The staff were fantastic. Top notch, cant wait to return.

    We booked 2 nights accommodation for family and friends for a celebration of a small wedding. We were advised at the time of booking that there was a no cancellation policy which we agreed to. After sending out invitations to everyone we received and email that our booking was cancelled 36 hours later with no explanation. After making a call to the vendor the only explanation we were given was that the nightly pricing was wrong at $3000 a night and the price should have been $5500. It was false advertising and no alternative plans were recommended or provided by the vendor. We had no alternate accommodation on such short notice therefore we had to cancel our wedding. The woman we talked to was rude and ignorant. We emailed her again with the same price per night response. Total disappoint for such a supposed high end resort. Don’t get fooled like us.

    Breath taking place lodge. The staff, food, service, etc. is absolutely incredible. I have never experienced anything even close to the experience here! The fireplace is even a rock climbing wall!! The staff are probably the nicest people you will ever meet. By far the nicest lodging ever!

    There are a million reasons to rationalize avoidance of this experience - none of which will stand the test of reflection. A splurge? You bet. As a Canadian, I have almost automatically chosen the annual winter respite to Caribbean Palm Trees, “new” resorts, & themes (they kind of all blend in if we are being honest). I/we have taken for granted the awe-striking beauty within our borders – Winter adventure……did not compute. Welcome to this massive pattern interrupt. #1 – The people. From the onset of the planning and constructing of the event, we were introduced to Veronika – combine all your favorite superheroes into one package - and that would fall ridiculously short of this unicorn of a human being. On point and in advance of any - and all planning aspects & fluidly dynamic to accommodate for any surprises (we had 12 people, half of which were children by age, and some of us - juvenile by maturity 😊) …..But the biggest act of magic, is that she pulls all of this off in a completely humble and understated way, I never felt so comfortable leaving my mind on complete autopilot. Veronika, there are no words that would do justice to all the essence that is you. Thank you for shepherding and inspiring us all. We were greeted upon entrance to this majestic chateau by the exuberant and personable Erin. If someone, somehow, could be in 3 places at once- it is Erin. She remembers your name, what you like and understands what makes you tick immediately. Erin assured that by the time you crossed the threshold, you were home. Moira, we were introduced to our incomparable 5-star Chef at the main service island, standing behind what must have been an entire day’s work of artfully presented platters with every combination of flavors and textures that the world has seen. Moira blew the roof off the place with the first shot, and she had plenty more fire power where that came from. Jimmy had his own style, specialties, and unique personality. Both Moira and Jimmy were quick to complement the other, as they set their counterpart up for success – Great Team. Best Supporting Cast – Hasea, Jamie, Victor & Ben. Once again, these folks knew the playbook, and were everywhere. We often wondered; how do they keep so in sync? Unflappable and more importantly completely endearing – I will miss them all. Special Teams – Amy the Masseuse extraordinaire, after a day on the slopes, she cheerfully worked out every knot and dent assuring you were ready to play another day. I am sure there is an incredible maintenance team behind the scenes, because everything seemed to work as planned - and somehow, magically our messes were cleaned up in an almost undetectable way; rooms were cleaned, beds turned down, legendary Revelstoke water next to the bed….. On point, always. The Bison Lodge itself, I purposefully left to later in this review, it can shine so brightly, as a direct result of the aforementioned Team. This is an architectural and functional masterpiece, keep looking deep into the detail, it gets better. You cannot help but contemplate the thought, craftsmanship and attention to comfort that went into this home. Towel warmers, steam showers, the little things and big things - all on tact. The mountains, they are magic, the folks who are attracted to this wonderful and somewhat hidden gem, all seem to have the same awe and respect for what is indescribable. The common thread that is woven through this magical place is how incredibly authentic and engaging all your interactions are; is it a Canadian thing….? I like to think so. On a mountain like that, everyone is a child in the best way – “we are all having a snow day” - and free from the mundanity that sometimes masquerades as our existence. The distance we were able to gain from the stuff that does not matter (which is most of it by the way), has altered our view in a way that I am sure we will all strive to retain. When cynicism creeps in, I will know it is time to return to the magic that is Bison & Revelstoke.
