    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Quat sanitizing solutions in the dishwashing sink and in buckets containing wiping cloths at the front preparation area were measured at a concentration less than 50 ppm.- Operator emptied and replaced the sanitizing solutions, the concentration tested to be 200 ppm.Ensure to monitor, maintain and verify the sanitizing solutions with test strips.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Utensil (spoons) observed to be sitting directly inside containers of frozen mango and raspberry in the chest freezer at the front preparation area.- Operator instructed to remove the utensil and place uprightly.Ensure that utensils are stored in a manner that the handles do not come in contact with the food.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Food debris noted on the floor of the walk-in cooler.- Ensure to clean and maintain in a sanitary condition at all times, including the hard-to-reach areas.

      • Staff was handling food in front of customers. Sneeze guard on the counter was not adequate to protect food from customer contamination. Fix the sneeze guard.Do not handling food in front of customers until there is adequate protection from customers. Handle food on the other side of the counter.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • There was no air gap at the dipper well.Provide an air gap.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1) Front display cooler door was missing a handle. Fix the handleBooster Juice stand up cooler door sealant was repaired with tape. Fix the sealant.
