- A phone was observed to be in the food preparation area. The phone was later removed by the staff. When having personal items within a food preparation area, there is the risk of cross contamination. There is a wide variety of microorganisms that can be present on a phone. In order to reduce this risk please use designated staff storage lockers.Please ensure that all personal items are being stored separately from any food related area.

- Open containers of lettuce and kale were observed in the fridge at the front of the restaurant. Since drinks and other food items were being stored above these uncovered containers, creating a potential risk of contamination, onsite staff were advised to place lids on the containers. Staff promptly placed lids on the container. Please ensure that lids or plastic are placed on all containers going forward.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The front fridge used for storing premade sandwiches was observed to not be maintaining a temperature of 4 C or below. When measured by an infrared thermometer, the temperature was 7 C and 8 C. A calibrated probe thermometer was used on the variety of chicken sandwiches, which were observed to be 11 C, 13 C and 8 C. The onsite staff indicated that the sandwiches were made at 8 am and 12 pm. The sandwiches that were made at 8 am were discarded, since they had been at higher temperatures for more than 2 hours, while the 12 pm sandwiches were moved to an operating fridge.Please ensure that the front fridge is decreased in temperature and able to hold a temperature of 4 C or below. If this is not possible, please consider hiring a technician to provide advice or continuing using another fridge.
