Bagel spread sampling bar was measured with a probe thermometer and found to be at 10.0C.Temperature of sample bar is measured and logged in the morning, but the core and surface of the sauce was measured to be warmer than the bottom of the container.Please avoid serving samples to customers from the spread bar.

- Hot held eggs, bacon, and sausage used in sandwich area was measured under 60C.Hot holding unit was composed of 2 drawers stack on top of one another, with the eggs on top and bacon and sausage on the bottom.Eggs were recorded to be at 49C. Second recording was taken after around 10 minutes and was measured at 55C. Hot holding unit had a display reading of 165FOperators were told to consider raising the heat during busier hours as to avoid losing heat from constantly opening drawers.Otherwise, walk-in cooler was holding foods at a satisfactory temperature of 1.5C and the freezer was recorded at -16C.

Please ensure to check internal temperatures of hot-held high risk food items regularly to ensure temperatures are 60 C or greater. 2) Cold food adequately maintained at 4 C and below.
