    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The chlorine sanitizer solution was mixed with soap for sanitizing food contact surfaces at the kitchen.Operator was educated on how soap reduces the effectiveness of sanitizing agents. Operator discarded solution and prepared chlorine solution of 100ppm.-Ensure soap is not mixed with sanitizing solution.-Ensure the Chlorine sanitizing agent concentration measures at 100ppm for food contact surfaces.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Food items such as bread, French fries, were stored directly on floor in the walk-in freezer.-Ensure all food items are stored 6 inches off the ground to protect from possible contamination, pest attraction and facilitate easy cleaning
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The cheese and brocolli soup in hot holding within 2 hours measured 48.6*C internal temperature. Operator removed soup to reheat and hot hold on cook top.- Ensure hot food are stored above 60*C to prevent microbial growth.-Monitor all food stored in temperature control zone.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Dirty used knives were stored on the knives wall hanger at a room temperature of 20*C.-Clean all used utensils and equipment within 2 hours of use.-Do not store dirty utensils in clean area

      • 4 exterior doors including the door in the kitchen need to have weatherstripping installed to prevent any pest entry.
