Cheese was measured at a temperature of 9 degrees Celsius in the insert container located across the pizza oven conveyor belt. **Ensure temperature can be maintained at 4 degrees Celsius or colder. ***CORRECTED DURING THE INSPECTION. PROPER FITTING LIDS AND ICE PACKS WERE ADDED TO THE CONTAINER FOR TEMPERATURE CONTROL. 2. Missing thermometer in the walk in cooler. **Obtain. ***CORRECTED DURING THE INSPECTION.

      • The handle of a wrench, used to hold hot pizza pans after cooking, had peeling tape on its handle. Repair or replace handle to render it smooth and easily cleanable.

      • The fire suppression hoses above the pasta cooking area appeared to have a buildup of dirt and debris. Clean indicated area.
